I am such a savory face but then I get to the evening and crave a little something sweet to go with my herbal tea. I found this original recipe via the VegieHead website, but have adapted it over time to suit my own taste. Poor Greggy got really excited when he first saw this in the fridge and thought I had fallen off my healthy food bandwagon. I got his standard 'that's an interesting taste isn't it?', remark but now he loves it (and has given up expecting a block a milk chocolate to appear in the pantry).
1 Cup raw almonds
1 Cup raw macadamias
1 Cup of medjool dates, pitted
3/4 Cup cacao powder
1/2 - 3/4 Cup melted coconut oil
1 Heaped tablespoon of almond spread
Rock salt to taste
Sesame seeds to sprinkle on top
In a food processor, blend the almonds and macadamias together to create a fine meal. Add the dates, cacao, coconut oil, almond spread and rock salt and blend until a fudgy consistency.
Spread into a lined slice tin and scatter with sesame seeds as desired. Refrigerate for at least 45 minutes. Remove, slice into squares and keep in an airtight container in the fridge.
